You have to lead them, (like shooting a bird with a shotgun), run to where the deer/horse is going to be, angling in from the side.

Deer can reach speeds up to around 40mph. Wild mustangs 35-40 mph and race horses reaching up to 50mph.
Not even the fastest human on the planet can do that.
